Shortbread

I can give one important piece of advice to all parents: make something together with your children —
they will never forget this. Presents are good, but joint experience is better.

Let's spend long New Year holidays making cookies with meringue.
You can hardly spoil them, and children will never forget your care.
The recipe is very simple, so don't be afraid of entrusting your children with the process.

Ingredients: 


500g top-grade wheat flour 
400g butter at room temperature (82% fat)
5 yolks and 5 whites
200g castor sugar (or powdered sugar) 
Vanilla pod
Zest of one lemon
1/2 tsp salt  

Method:

1. Knead the butter with your hands.

2. Sieve the flour into a bowl and make a well in the middle.

3. Put the butter, vanilla seeds and the lemon zest into the well.

4. Mash the sugar, the salt and the yolks in a processor. Transfer this yolk and sugar mixture into the well and knead the dough.

5. When the dough is ready, make a ball, wrap it in plastic wrap and put in a fridge for 1 hour. 

6. Make meringue, while the dough is resting. Beat 5 whites with several drops of lemon juice, a pinch of salt and 3 handfuls of sugar.

7. Put beaten whites into a pastry bag and pipe them on a greased sheet pan.

8. Take the dough out of the fridge and roll it out until 5mm thick. Cut the dough with cookie cutters (use the most intricate ones!).

9. Line the sheet pan with parchment paper and heat an oven up to 250°С.
The cookies will be ready in 8-10 minutes.

10. Cool the oven down to 50-55 °С and put the sheet pan with the meringue inside for 4 hours (it is quite a long time indeed, but you should allow the meringue to dry fully).
